Cedar vat (kioke) fermentation is a documented and increasingly rare traditional Japanese method. The 2-year fermentation period is substantiated by Yamaki Jozo's stated production process. No artificial colour (standard shoyu often uses caramel) is verified by the ingredient declaration.
